Ferme du camp grand ! Le goût des champs! Camp Grand, pour ceux qui ne parlent pas l’occitan, c’est le « grand champ ». C’est là que j’élève mes canards en plein air, comme cela s’est toujours fait sur ce plateau qui surplombe les vallées du Viaur et du Céor. La recette est la même depuis 30 ans : de l’espace, des parcours enherbés, des céréales produites sur place, un gavage traditionnel sur paille et surtout prendre le temps de faire bien, de faire bon. Édith et Patrick, mes prédécesseurs ont su conserver et parfaire nos belles recettes aveyronnaises : foie gras, pâtés, rillettes, confits… Tout ce que le canard gras nous offre comme bonheur !
